Bernard Iweins and his son at Les Trappeurs B&B

A healthy, passive-energy house designed by Bernard Iweins. It's entirely built of timber, from the frame to the weatherboarding. Protected with coats of environmentally friendly paint. Bad vibes driven away. Calming and welcoming atmosphere.

Welcome to Les Trappeurs. Three B&B guest bedrooms rated three ears of corn, with a sauna, dining room and lounge. Breakfast is composed of natural, local produce, including home-made honey and jams and apple juice from the orchard.

The set-menu meals include trout from Freux, buffalo meat from Recogne, or game from the local forests plus mushrooms foraged by Bernard and his son Victor. On request, a nature guide will join you for a meal and then lead you into the forest to hear stags belling…

Bernard recommends: La Chèvrerie du Moulin de Wez

The Maquisards' trail starts at the church in Ernuville and runs for 7km through the Saint-Hubert Forest. After enjoying such magnificent countryside, make sure you have time for a gourmet stop at the Moulin de Wez, goat farm, just a stone's throw from the trail.

At the farm, they raise organic goats and make goats-milk cheese:  plain or spicy fresh "crottins", matured "crottins", bacon-wrapped "crottins", vintage dry "crottins"; plain or chilli-pepper ash-dusted  pyramids and hearts; plain or garlic-and-herbs soft cheese; plain "tomme", cumin or fenugreek "tomme"... the choice of available cheeses depends on the season. Besides its goats, the farm also has an organic market garden and uses horse-drawn tools and vehicles, as well as making organic apple juice.

The farm shop's shelves are stocked with home-made produce as well as produce from neighbouring farms, including home-made ketchup, wild-garlic pesto, yogurt, eggs, milk, honey, salami, white, grey and wholemeal  flour and goat-milk soap...
