Sophie Dessimoz

For seven generations, the Abbey Inn has been welcoming travellers on the square in Signy-l’Abbaye. Today, the inn is run by Sophie and the farm by Frédéric, where he raises organic cattle and sheep.

The inn has thirteen bedrooms, seven rustic and authentic ones in the original building, and the other six in a more contemporary-style extension built six years ago. The ground-floor bedroom is accessible by reduced-mobility guests. The building work was entrusted almost entirely to local artisans and businesses, using local materials as much as possible. The slates on the roof come from the factory at Signy, the concrete and hemp insulation from Poix-Terron, and the timber ceiling beams from the Vosges… all eco-responsible.

The same priority for local and organic ingredients is evident at the dining table: home-made bread using flour ground at the village mill, organic milk, yogurt and butter produced in a 10km radius and ham cured in the French Ardennes… Terroir on your plate.

Recommended by Sophie: Le Comptoir Bio des Ardennes

Several producers of organic food have come together in this association to offer consumers a one-stop source for local produce from organic farms or farms moving towards an autonomous and money-saving style of agriculture. Orders are placed via an open-source website and then collected at a central point. The farmers and producers are often present at these collections, and offer guided tours of their farms so that their customers can gain an insight into their production processes.

At Ecordal, sixteen producers have joined this adventure, offering  fruit and vegetables, meat, eggs, honey, cheese, butter, yogurt, bread and cakes, herbal teas, beer, wine, and prepared meals, plus soap and essential oils, household cleaners and disinfectants. As well as being produced locally, some are Fairtrade.

Everything you need to shop with a clear conscience, supporting the local economy and the network of local producers who take care of the land.
