Conviviality, authenticity, simplicity. In three words, Véronique Dehou sets the tone of her B&B. She has converted a former clog-maker's workshop (parts of which date back to 1850) to offer two large and one smaller B&B guest rooms.
The gastronomic set-menu meals, from aperitif to coffee, are occasions for sharing. Everything served is based on local, organic or sustainable produce. In fine weather, meals are served outdoors in the garden while admiring the sunset. Véronique takes her guests on a journey through the region on their plates. She is very pleased to advise on real-life walks and hikes in the beautiful Pays de Chimay Forest, which is quite different from the rest of the Ardennes. Her B&B is very popular with Dutch cyclists for an overnight stop in the country on their way to Paris. Hikers with dogs are also fans. If you fancy rolling up your sleeves in the kitchen, Véronique also offers cookery classes where you prepare a meal that you eat together at the end.

Véronique recommends: Lange butcher's shop
In the heart of Chimay, a young butcher, his wife and his team make your tastebuds tingle. At the kitchen behind the Lange butcher's shop, they prepare mouth-watering home-made cooked meats. The local terroir is in their terrines. As soon as you see it, you realise it's all home-made, and this is confirmed when you taste it. Their terrines and black and white puddings star in the set-menu meals at Les Gaités de la Sabotière. Véronique is keen to stress the quality of their work.
The young butcher also offers a range of prepared meals, each more delicious than the next: roast chickens ; cheese or meat fondue, raclette and pierrade platters; tartiflette; couscous; choucroute garnie; monthly meat parcels; veal blanquette; duck à l’orange and chicken and bacon roulade… What they all have in common is the quality of their ingredients and their local origin. The meat comes from the family farm and the cheese from Les Saveurs du Bois at Virelles, for example. Authenticity and simplicity, the circle is complete.
