B&B La Chabetaine

Les Myosotis gîtes

Alin and Béatrice Collard

Located near the source of the River Sûre, these two gîtes and three B&B guest rooms invite you to leave the outside world behind completely. The 'Forget-me-Not' gîtes - Indigo and Royal Blue- are in a former farm cottage that was converted using lots of elbow grease and determination by Béatrice and Alin Collard.

Béatrice & Alin Collard - Myosotis & Chabetaine

Five years’ work has restored this old Ardennes village cottage, dating back to before 1850, to life. By retaining as many original features as possible, they have given it back its soul.

At La Chabetaine, three B&B guest rooms can be found in a brand-new timber-framed building that is 99% environmentally friendly, built according to feng shui principles. It is comfortable and filled with light.

Suggested activities for guests include short walks, longer hikes, remembrance tourism in Bastogne, architectural tours in La Roche, Bouillon or Orval and cyclo-touring, but also simply observing the countryside and (re)discovering the treasures of nature and enjoying some “me time” far from the madding crowd. Simple pleasures.

Béatrice and Alin recommend: Cooked meats and salamis made by the Hartman family

The Hartman family created “Délice de la Sûre”, dried and lightly smoked ham, using meat from carefully selected pigs. A slow maturing process and tradition do the rest.

For very nearly 100 years, three generations of pork butchers have continued this work of butchering and processing meat, making use of a blend of know-how, love of their trade, top-quality ingredients and respect for tradition, with the addition of sufficient daring to innovate and constantly question their methods.

Marie-France and Jean-Pol Hartman have run a showcase for their products in the centre of Bastogne for ten years: the Pig Museum. There you will find the famous “Délice de la Sûre” and also home-made cooked meats including black puddings, pâtés, cooked ham, brawn, salamis, cervelas sausages and meatballs, plus dried pork fillet, bacon, spare ribs and smoked pork belly, etc.
